Banana cakes, carmel, vegan truffles… When it comes to sweets, I’m all gone. I can spend hours in the kitchen, trying to figure out the best combination of flavours. Actually, I wasn’t so much into sweets before I’ve started eating clean. Of course, I was addicted like most of people who eat junk food are, but still I didn’t like it so much. Once I eliminated all carbs from my diet, it was the first detox in my life (and that’s how my clean journey begun)… I would run to the nearest shop to buy ice creams in the middle of the night, but it was only because my body was addicted to sugar. Not my soul, cause still, if I had a choice of eating a dessert or to order a pizza, I would go for the latter.
The real passion for sweets emerged when I discovered stevia, erythritol, coconut sugar, xylitol and other natural, healthy sweeteners. Could you imagine that I have never made a real cake with white flour, sugar and other stuff? I was totally not into baking in my ‘previous’, sugary life. But once I discovered the real magic behind healthy cooking, all of sudden, I felt the real passion. It’s so beautiful that you can make something really healthy with just a few ingredients. Something that is much better than sugary cake!
Vegan truffles with a nutty surprise, are my favourite healthy, sweet snack. But it’s probably because I’m a real fan of nuts. All kinds of nuts. I always make truffles as a gift. If I give you truffles, that mean that I care. If you want to surprise someone, make them some of these!
Recipe: Vegan truffles with a yummy surprise inside
- 1 cup of peanuts
- 2 spoons of melted coconut oil
- 3 spoons of agave
- a pinch of salt (big one!)
- 1/2 cup/125ml coconut milk
- 1/4 cup/60ml melted coconut oil
- 70g cacao powder
- 4 spoons of carob molasses
- 3-4 teaspoons of stevia with erythritol (like Truvia)
Chocolate cover (the outside)
- In a small pot heat the water. Put an aluminium bowl or a smaller saucepan on the pot.
- Pour the liquid ingredients into the smaller pot/saucepan and warm it up in a water bath until liquid components heat up slightly. Stir it well.
- Add the cocoa in small batches. Mix it well after each portion. Add the remaining ingredients and mix. You can try if it’s sweet enough. If not, you can add an extra teaspoon of sweetener.
- Place it in the fridge for 30 minutes (maximum 45 minutes as it cannot fully solidify because it will be hard to coat the peanut inside). *
Peanuts (the inside)
- Roast peanuts on a frying pan until golden brown.
- Place it in a blender / chopper / food processor and combine with the rest of the ingredients. Blend it well. It should be sticky.
- Form small balls. It should be a little bit bigger than your thumb nail.
- The beads are plunged into the chocolate mass and form truffles.
- Cover each truffle with chocolate and place in the fridge.
You can store vegan truffles in the fridge for about a week. Actually, I’m not sure. Mine’s never lasted so long… ; )
